Breakfast Recipe for Busy Elder Caregivers

Your elder care schedule may be so busy that you feel overwhelmed from the moment you wake up, but if there is one thing you can do to make the day easier for you and for your aging loved Elder-Care-in-Loomis-CAones, it is eating a good breakfast. Breakfast is your chance to start your day off with a bang, giving your body the nutrition it needs to fuel you through the demands of the day and support its regular functions. Instead of grabbing a doughnut or wolfing down a bowl of sugary cereal that is going to leave you feeling even more tired and rundown by the middle of the morning, take the time to prepare a healthy breakfast and enjoy the benefits for the rest of the day.

This is a fantastic recipe for you to make for your aging parents when you are caring for them for the day, but it is also simple enough for you to share with their elderly health care services provider so they can enjoy a healthy, power-packed start to their day with your elderly loved ones.

What You'll Need
• 1/2 minced medium onion
• 4 medium garlic cloves
• 1/4 pound ground turkey
• 3 tablespoons chicken broth, divided
• 3 cups rinsed, finely chopped kale
• 5 whole eggs
• Salt and pepper to taste
• Sharp knife
• Stainless steel skillet
• Heat resistant spoon
• Mixing bowl
• Whisk

What to Do
• Use the sharp knife to mince the onion
• Use the broad side of the knife to crush the garlic cloves. Remove the skin, and chop the cloves
• Allow both of these to sit for at least 5 minutes for the greatest health benefits
• Preheat the broiler to low
• Pour 1 tablespoon of the chicken broth into the stainless steel skillet. Make sure that the skillet does not have a covering on the handle that will melt or burn in the oven
• Heat the broth over medium heat
• Add the onion and saute for about 3 minutes, stirring frequently with the heat resistant spoon
• Add the garlic and the ground turkey
• Cook for another 3 minutes, using the heat resistant spoon to break the meat up to a consistent texture
• Add the other 2 tablespoons of broth and the kale
• Reduce the heat to low and cover
• Cook for another 5 minutes
• Season with salt and pepper
• Crack the eggs into the mixing bowl
• Use the whisk to beat the eggs
• Add salt and pepper to taste
• Pour the beaten egg mixture carefully over the top of the rest of the ingredients, do not stir
• Cook on low for another 2 minutes
• Carefully place the skillet under the broiler in the middle of the oven. Ideally the top of the frittata should be about 7 inches away from the heat source to ensure the eggs cook through without burning the top
• Cook until the eggs are firm, about 2 to 3 minutes
• Allow to cook for 3 minutes before turning out onto a serving plate.
