The insidious problem with simple carbs is that they get absorbed immediately into the bloodstream, bypassing most of the digestive system, spike our blood sugar, setting off an insulin response. We have an immediate burst of energy and a “bliss point” reaction, followed by fatigue and sluggishness as the insulin kicks in. The insulin prevents the cells from utilizing the sugar, leaving an unhealthy level of blood sugar in the system. The liver then has to convert the excess sugar to fat, leading to high triglycerides and cholesterol levels. The result is fat accumulating around the mid-section and being deposited in the form of plague into our arteries. This is how we are creating our own cardiovascular disease in ever increasing epidemic proportions.
